Domaine A&P de Villaine is owned by Aubert and Pamela de Villaine. Wine lovers will recognize de Villaine as one of the directors of the famous Domaine de la Romanée-Conti. The property is located in the town of Bouzeron in the Côte Chalonnaises in the Burgundy region of France. The Bouzeron A.C. was created in 1998 with Aligoté as its single grape variety. In the Bouzeron A.C., if the bottle has only Bouzeron on the label, the wine will be 100% Aligoté, otherwise it will say Bourgogne Aligoté and can be blended with up to 35% Chardonnay. Traditionally the Kir cocktail is a blend of Aligoté and créme de cassis.
Winery:
Domaine de Villaine is located in Bouzeron, in the Côte Chalonnaise region between Chassagne-Montrachet and Santenay to the north and Rully and Mercury to the south. The winery's facilities are settled in an old house with its outbuildings in the middle of the village. The vines are situated on the best upper slopes of the appellation. The Domaine is planted to only 10 hectares of Aligoté and is organically farmed. With the merger soils and the goblet pruning, the yields are keep very low. This helps to impart the rich minerality and richness to the wine.
Vinification:
After the grapes are gathered and sorted by hand, the grapes go immediately into a pneumatic press. Pressing is slow and gentle in order to obtain clear and non-astringent juice. After malolactic fermentation, the wine goes into both stainless steel vats and neutral wood to age on the lees before stabilizing and bottling.
Bouquet or Aromas:
White-green in hue and a hint of gold in color, with a discreet scent of vanilla in the nose. The minerality is integrated with a firm richness and balance. There are also expressive hints of melon, white peach and fresh grapes. This is a wine that can be drunk in its youth but will age for about ten years to fully develop.
Taste:
On the palate, a silken texture of minerality and stone fruit flavors. The white peach and citrus notes are present with a hint of field herbs and wet stones. Again this wine is a bit closed but has the presence and balance of a wine that will open gradually and reward you with years of rich flavors changing and evolving.
Pairings:
This is a great apéritif wine and serves well with all dishes seafood. The dryness of this wine cuts through cream sauces and brings balance to the dish. A great dish of rabbit in a cream sauce would be perfect. Also great with chicken dishes and accompanying an artesian cheese board.
