Description:
Tannat means tannin and comes from the Pyrenees Basque region in Southern France below Bordeaux. Tannat in this region is the primary grape in the wines of the Madiran AC. It is said that these vineyards in this region date back to Gallo-Roman times. At the turn of the 20th century, the Basque people began migrating to Uruguay and they took the Tannat grape with them. Today the Tannat grape is the most widely planted grape in that country. There are less than a hand full of wineries producing Tannat in California. The cuttings of Tannat at Cambiata came directly from the imported cutting at Tablas Creek Winery.
Winery:
Cambiata winery is an independently owned winery. Wine maker Eric Laumann has been making wine for 25 years and when the opportunity arose for him to start his own winery, he decided to pursue a project that he found stimulating but also one that would add a new dimension to food and wine pairing. The Tannat is planted on a tiny, well-drained bench land parcel just south of the Santa Lucia Highlands.
Vinification:
During Fermentation, to accentuate the soft tannins the wine went through aerobic pump overs and long slow maceration. Tannat loves oxygen and it took over 24 months of barrel aging before this wine was ready for
bottling.
Bouquet or Aromas:
When Tannat is made properly, it is bold yet refined, thought provoking and an experience that extends beyond the last glass. It has a rich fragrance of violets, blueberries, herbs and brush. You are treated to hints of blackberry and licorice and this deep lore of dark black chocolate. The aromas are quite intense but very well integrated and balanced. This wine should be decanted before drinking to be totally appreciated.
Taste:
The color is indigo red, with a deep unctuous mouth filling blast of blackberry and tannin. With notes of licorice and that wonderful dark chocolate structure that is a bit intimidating at first but what a reward as you continue your experience. This is a great big wine with layers and layers of structure and subtle notes that will keep you coming back to the glass. This is a truly age worthy wine that will bring you many enjoyable experiences.
Pairings:
This is a wine for hardy fare, savory roasts, aged beef and aged cheese. Great with rich, savory game and great spaghetti sauce made with beef, pork and hardy sausage the way I like it. And surprisingly, this big red wine plays well with that most opinionated of fish, the Anchovy. The wine has the tannin to cut through the oily persistence of the fish and the slightly higher acidity to rinse your palate clean. Lets go big red lovers.
