Description:
Cori is a town and comune in the province of Latina, in the Lazio region of central Italy. The estate is currently composed of about 52.5 hectares of land in the districts of Capo Le Mole, Casale, Pezze Di Ninfa and San Pietro in the area of Cori, an ancient Latium hill town located about 28 miles south of Rome. Its history goes back to the 4th century B.C. The Capolemole Bianco takes its name from the locality where the vineyards reside, the area is called Capo le Mole. The vineyards are situated 1000 feet above sea level.
Winery:
The estate of Marco Carpineti has been in the same family for many generations. The current owner has dedicated himself to moving the production methods to a total focus on quality. A major part of the transformation has been the adoption of organic farming. Now certified organic by the government of Italy, the farming methods used by Marco are more rigorous than the industry norm. He is in the process of adopting Biodynamic farming methods for his vineyards. The skeletal soil, volcanic in origin, is made up of limestone on the higher plateaus and mainly of volcanic rock tuff in the lower slopes. The age of the vineyards is between 2 years up to 30.
Vinification:
The vineyards are cultivated with organic procedures and the harvest is picked by hand. The selected grapes are quickly transferred to the winery where they are de-stemmed and softly pressed. Part of the harvest is fermented in stainless steel tanks and part is fermented in oak fermentation tanks. The final blending is done in the spring prior to bottling.
Bouquet or Aromas:
A medium to dark golden color, it opens up into a complex nose mixing some herbal notes with a nectar sweetness and a hint of honey and vanilla that follows through on the palate. The aromas are aromatic and balanced with the stone fruit of peaches and apricots showing a hint of herbaciousness and honeysuckle.
Taste:
This wine is rich and full-bodied with notes of peach and pear along with a hint of minerality. A noted hint of honeysuckle and dry herbs are well balanced with the acidity giving the wine a deep rich fruit flavor. There is a lot going on with this wine and it shows the exotic grapes at their best, a must try!
Pairings:
A rich and pleasing wine that pairs easily with food, even otherwise hard-to-pair cuisine. Suggestions include seafood, pasta and assortments of soft cheeses. Will stand up to sushi and tempura dishes. Try with seafood dishes with rich cream sauces or alfredo pasta dishes.
