Description:
This cava is a true experience to enjoy. Made from the very rare and indigenous Trepat grape of the Penedés wine region of Spain. There are very few wineries making a 100% Tepat cava and even fewer importing them to the United States. The wine is fun, refreshing and great for all the fun summer parties and cookouts. You can match the Mont-Marçal brut Rosé with so many dishes or just enjoy it alone at the beginning of the party or reception.
Winery:
Mont Marçal Vinicola S.A. is nestled in the "Mas Lluet de Dalt" farm right in the heart of the Penedés wine region at an altitude of 220 meters above sea level in the municipality of Castellvi de la Marca, southwest of Barcelona, Spain. The farm house at Mont Marçal records date back to February 18, 1317, and the house was completely renovated at the end of the 19th century. Manuel Sancho founded Mont Marçal in 1975 to make wines and cavas. The farm has 40 hectares of its own with 300 hectares controlled from the surrounding grape suppliers, producing indigenous varieties of Macabeo, Xarello, Parellada and Trepat along with other grape varieties.
Vinification:
The grapes are picked, cool stabilized for 12 hours, pneumatic pressed, juice separated from the skins and fermented for about 15 days. Then the wine is clarified, tartaric acid stabilized and filtered. The second fermentation in the bottle takes place over the next 12-months in the caves. The wine is then disgorged and topped with a liquor that is without sugar.
Bouquet or Aromas:
The color is an attractive red currant bluish tone with a very small mousse. The nose is aromas of red fruits of cherries, blackberries and raspberries with hints of plums and fig preserve and a light smell of the yeast. The berry flavors are quite balanced and the mousse is very small with a hint of yeast making it very pleasant and refreshing.

Taste:
On the palate you experience the young fruits of cherry, raspberry and blackberry. Fresh clean bubbles with a smooth and creamy rich finish and an elegant overall appeal. Very refreshing and clean fruit structure.
Pairings:
This cava is ideal for drinking as an aperitif before a party or summer barbeque. It goes great with a wide variety of dishes, from fish, shellfish to light meat dishes, pasta, rice, salads, smoked food and sausages. The light effervescence and bright red berry fruit makes the cava very versatile and appealing to many dishes.
