Description:
The Pallavicini family dates back to 1607 with the birth of Nicolo Pallavicini from Genoa. The Colonna estate is 90 hectares and called "La Tenuta di Colonna" of which 64 hectares is planted to vines. Principe Pallavicini is a family estate in the Castelli Romani region of Italy, in the picturesque hills south of Rome on the border with Tuscany. The Pallavicini estate is owned today by the Princess Maria Camilla. The Tirso is made from 100% Cesanese grapes, hand-harvested from vinryards on volcanic hills south of Rome.
Winery:
The vineyards are predominantly sloping and have well-drained limestone-clay soil. The plantings are at various heights on the hills from 100 to 300 meters above sea level near the town of Collona. The main cellars are situated at Colonna in 17th century buildings on Via Casilina. This same building also houses the bottling line, warehouse, offices and the restaurant"L"Osteria della Colonna". The cellars of the winery are housed in the stone vaults that were part of the ancient Roman water system. The vines are between 10 and 25 years old. The vines are trained in both the cazenave style and spur-pruned and guyot system.
Vinification:
The grapes are harvested the beginning of October by hand. The juice is fermented for one week in stainless steel tanks.
Bouquet or Aromas:
Intense ruby red color with violet garnet reflections. The aroma is pleasant and characterized by mature fruit nuances and a slight spiciness. Cherries, raspberries and red plum fruit aromas with a bit of old oak notes. Hints of earthyness round out the nose.
Taste:
On the palate, balanced taste of warm flavors that are slightly sweet and persistent. Clean fruit in the mouth of preserved cherries and sweet plums with an oaky tone and slighty spicy flavors. Hints of dried grape berries, dusty tannins and persistant fruit carries the wine with a very attractive finish.
Pairings:
Pairs well with grilled or roasted vegetables, red meat, grilled, roasted or boiled, especially lamb. Works well with a cheese board with medium to mature cheeses.
Cheese Pairing:
Pecorino Toscano Stagionato
