With its majestic cellars in the heart of the Touraine, Marc Bredif has been one of the most famous Vouvray and Chinon houses since 1893. When Baron Patrick de Ladoucette took over the house in 1980, he breathed new life into the century old winery, while preserving its traditions. Today, Marc Bredif continues to produce Vouvray and Chinon wines of the finest quality.
The history of the wines of Vouvray is directly linked to the religious history of Touraine. From the 4th century onwards, the monks owned most of the vineyards, including the best growths. The cellars of Marc Bredif are among the biggest and most beautiful of the appellation and the digging of the tuft hillsides to make them began in the 8th century. The wines have an aging potential from 5 to 20 years.
Winery:
Principally gravelly wasteland, with variable proportions of clay. The winery is gravity fed, ensuring a large percentage of free run juice. The vineyards are mainly chalk clay with some parcels flint clay on lower slopes along the Vouvray Valley and mostly clustered around the town of Saumur, which makes up the prime areas of red wine production.
Vinification:
The grapes are de-stemed. Fermentation lasts 15 days on skins with pumping-over twice a day. The grapes are pressed and transferred to vats for malolactic fermentation. Maturing takes place in stainless steel tanks with regular racking.
Bouquet or Aromas:
The color is a deep garnet rich and brillant and on the nose, intense, refined and fruity. Nuances of cherry, strawberry, raspberry and spicy notes. A slight herbal scent that intergrates very well with the fruit and spice aromas.
Taste:
On the palate the wine is fresh and lively with fruits of cherry, strawberry, raspberry and herbal spices. The hints of black pepper are present with well integrated tannins. This is a medium bodied wine that is quite pleasant and delicate with a very appealing finish.
Pairings:
Pair this wine with dishes of roast pork, chicken in red wine and Italian pasta dishes lightly sauced with a red sauce. Excellent with a cheese board with hearty cheeses like Cheddar, Gruyère, Pecorino and Parmigiano. Chinon is a wine for family comfort foods that celebrate the joy of family meals with friends.
