Description:
With its majestic cellars in the heart of the Touraine, Marc Bredif has been one of the most famous Vouvray and Chinon houses since 1893. When Baron Patrick de Ladoucette took over the house in 1980, he breathed new life into the century old winery, while preserving its traditions. Today, Marc Bredif continues to produce Vouvray and Chinon wines of the finest quality.
The history of the wines of Vouvray is directly linked to the religious history of Touraine. From the 4th century onwards, the monks owned most of the vineyards, including the best growths. The cellars of Marc Bredif are among the biggest and most beautiful of the appellation and the digging of the tuft hillsides to make them, began in the 8th century. The wines have an aging potential from 5 to 20 years.
Winery:
Principally gravelly wasteland, with variable proportions of clay. The winery is gravity fed, ensuring a large percentage of free run juice. The vineyards are mainly chalk clay with some parcels flint clay on lower slopes along the Vouvray Valley and and Vernou-sur-Brenne with northern/southern exposure.
Vinification:
The grapes are de-stemed. Fermentation takes place in stainless steel tanks. No oak is used in the winemaking of the Vouvray to respect the freshness of the grapes and the terroir.
Bouquet or Aromas:
This wine has a bright, pale golden-color. On the nose there are intense peach and apricot fruits combined with notes of white flowers and quince. This is a classic great Chenin Blanc nose. The color is pale gold yellow, very intense and fruity nose with notes of white flower and quince. White peach and stone fruit aromas with a very enjoyable mineral tone. The balance of acidity and fruit is quite pleasent on the finish.
Taste:
The palate shows very good acid structure , a standard in the Loire Valley, with rich, round and ripe flavors of fresh peaches and a pleasant herbaceous complexity, a hallmark of great Vouvrays. The acidity is well balanced with the fruit flavors and a very slight residual sugar making this wine a must if you love wines with the balance and structure of fruit and acidity.
Pairings:
Vouvray is a great aperitif wine. Goes well with light fish, shrimp and scallop appetizers. Works well with Asian dishes from China to Japan. Vouvray balances well with the spicy flavors of these Pacific Rim dishes. One could say it was a clasic match. Try this wine with your favorite chichen dish, I like it with my homemade chicken soup.
Cheese Pairing:
Cashel Blue
