Description:
The "Barbera d'Asti" has always been a young, fresh and fruity wine. The Barbera grape is the most popular and widespread vine in Piemonte. It's like a sweet and fascinating "child", with its simplicity and freshness, showing off the delicacy of its personality and the preciousness of its charm. It has great potential, but it is like a playful puppy. For this reason the Cavallero brothers have chosen to call the simplest and youngest of their Barbera's "Baby". "Baby" is a young, simple, spontaneous, natural wine. Full of bright fresh berry fruit with a simple relaxing, pleasant appeal that is both fun and relaxing to kick back and enjoy.
Winery:
Giuseppe Cavallero began his winemaking as a result of a quirk of fate over his health problems. He moved to Liguria by the sea in the 1970s where he developed his customer-direct wine sales. In the 1980s Giuseppe started construction on a new, modern winemaking cellar, located in the middle of the estate vineyards, with up-to-date equipment capable of producing wine of the highest quality possible. In the early 1990s, the two Cavallero brothers, Claudio and Franco began to take over the reins of their father's enterprise. In 1992, the brothers renamed the estate Cantine Sant'Agata, named after a small votive marker opposite the winery erected by a wealthy local family in gratitude for divine favor. The two brother divide up the responsibilities, with Claudio becoming the talented winemaker and Franco directing marketing and sales.
Vinification:
The grapes are hand picked, placed in stainless steel tanks where maceration takes place over 8-10 days at a temperature of 28-30⁰C. The wine then goes through malolactic in the stainless steel tanks and is aged in tank for 6 months before being bottled.
Bouquet or Aromas:
The wine has a brilliant ruby red color with fresh scents, hints of woodlands, hay and very brambly fruit. Crisp and fruity with lots of cherry, raspberry, with hint of spice and black pepper. The is a bright fresh Barbera that has all the notes of a very fruit forward red made to be enjoyed young but with the ability to age. The nose is so inviting you just want to try it.
Taste:
On the palate, lots of juicy red fruit with nice acidity. The fruits of cherry, raspberry, spice and cracked pepper from the nose that follows through with a pleasant refreshing guaffablity that is both easy and enjoyable. This is a wine to be enjoyed for all its "baby" character, light and fresh. A perfect expression of unoaked Barbera.
Pairings:
A great wine for those simple, easy Italian meals, pasta with a fresh red sauce, pizza, beef or pork shank. Traditional meals like meatloaf, Thanksgiving turkey, seafood dishes with a red sauce, light game dishes and that American classic, the hamburger.
