Description:
Dolcetto, the "little sweet one". A grape that produces a friendly, playful, youthful, easy-going wine. A wine to drink now, at a picnic or with a pizza. In 2006 Steve Clifton decided to experiment with pruning. Rather than the traditional cordon/spur pruning, he had the vineyard crew cane prune a few rows of the honea vineyard. This is the pruning technique of choice in northeastern Italy. The resulting wine was phenomenally different, more serious, more complex, darker and a must wine to try. The 2007 Dolcetto Honea vineyard must be drunk side by side with the Santa Barbara Dolcetto, experience the ying & yang, the night and day of a varietal pruned two different ways. WOW!!!
Winery:
Palmina Winery began in 1995 and is owned by Steve and Chrystal Clifton. The winery is located in Lompoc, California. Palmina is named after Steve's great friend Paula who taught him the love of the Italian lifestyle. After Paula succumbed to breast cancer Steve found that her given name was Palmina and the winery was then named in her honor. Palmina's Dolcetto is grown at the Honea Vineyard in the "Alamo Pintado Corridor" of the Santa Ynez Valley. The rolling hills, sandy alluvial soils of the vineyard together with warm sunny days followed by cool, crisp evenings mature the grapes to their perfect ripeness.
Vinification:
The crop size was smaller, the clusters longer and heavier and each one uniformly ripe. The cane pruned section was picked at lower sugar and the whole clusters were placed into 1.5 ton open top fermenters, cold soaked for a few days and then fermented with stem. Placed into French oak barrels after fermentation, the cane-pruned Dolcetto aged for 11 months before bottling in December of 2008
Bouquet or Aromas:
The color of deep maroon, hints of the depth of flavors, a bit closed and shy at first swirl, the 2007 Dolcetto Hones Vineyard yields a dark fruit profile of blueberries, blackberries and mocha, with earthy tar overtones, all intertwined with robust tannins. Hints of orange peel and spice round out its complex nose.
Taste:
On the palate you will note the flavors of French vanilla bean, cocoa powder, black raspberry, blackberry, orange pekoe tea and that dark chocolate/orange peel truffle all meld together, layer after layer. This wine is complex and fascinating. The texture is both silky and mocha-like and the finish is lingering.
Pairings:
This wine is a bit "Pinotesque" in character so it can be paired with light meat dishes and hearty seafood. Great with grilled shrimp, scallops or calamari with a tomato sauce. Try with lamb, duck or short ribs, or try it with polenta topped with a poached egg sprinkled with sage and crispy pancetta. A very versatile wine that truly shines with agreat dish to shine.
