Tocai Friulano (now known simply as Friulano in Italy, as of the 2007 vintage, due to recent ECC rules) the white grape varietal from the Friuli region of northeast Italy has taken on new meaning in the Santa Ynez Valley. A grape of extraordinary complexity and versatility, known for its aromatic characteristics and versatility with food has been turned upside down with the making of Subida. The classic vinification of Friulano is stainless steel to bring out all of its aromatic character. Steve has treated this classic as a reds wine and the results are so remarkable. At the Clifton's wedding reception at La Subida Restaurant in Friuli Italy they were served a complex richly textured wine made from Friulano but it was barrel fermented by their friends Valter Scarbolo and Joe Bastianich and the seed was planted. Subido is the blossom of that seed.
Winery:
Palmina Winery began in 1995 and is owned by Steve and Chrystal Clifton. The winery is located in Lompoc, California. Palmina is named after Steve's great friend Paula who taught him the love of the Italian lifestyle. After Paula succumbed to breast cancer Steve found that her given name was Palmina and the winery was then named in her honor. Palmina's Subida is grown at the Honea Vineyard in the "Alamo Pintado Corridor" of the Santa Ynez Valley. The rolling hills, sandy alluvial soils of the vineyard together with warm sunny days followed by cool, crisp evenings mature the grapes to their perfect ripeness.
Vinification:
With the 2007 vintage, Palmina crafted a small lot of Tocai as if it were a red wine. The grapes were de-stemmed, left on the skins during fermentation and punched down twice each day for 32 days. The new wine was then pressed, racked with lees into neutral barrels, where it aged an additional nine months. No sulphur additions at all - before being racked off lees, filtered and bottle.
Bouquet or Aromas:
The white-gold hued wine is heady yet subdued with layers of acacia honey, pear, honeysuckle, lychee nut, mineral, spice and hints of nightime flowers. The layers are somewhat muted but have an ever present need to explore the flavors that becken from the glass.
Taste:
On the palate the wine reveals a distintive creamy texture, round and viscous. The fruits are of poached pears, mango, dried herbs with a hint of vanilla bean. There is a flinty minerality of lime stone and just ripe melons. The wine has many layers of flavors that evolve as the wine warms in your glass and you find yourself enjoying all the wine has to offer.
Pairings:
This wine is best served slightly chilled and paired with hearty and savory dishes. Seafood stews, rich shellfish dishes, savory risottos and rich vegetable quiche. At Palmina, their featured recipe is Arancini (literally translated "little oranges"), fried risotto rice croquettes.
