Beemster Classic is a long aged Dutch Gouda cheese from the quiet, pesticide-free, canal-lined pastures of the Beemster Polder in North Holland. This remarkable area in Holland was about 20 feet below sea level until 1612, when the lake was drained using dykes and windmills. The land soon became inhabited by farmers raising cows. They discovered that the milk the cows gave from grazing on the Beemster pastures was of very high quality with softer and sweeter milk fat. The quality of the milk was a result of the grass grown in the rich, fertile soil from several thousand-year-old, bluish colored, sea-clay. In 1901 the farmers of the area formed a cooperative with about 550 farmers. The Beemster Classic is aged for at least 18 months.
Texture:
This is a hard cheese, the color of pumpkin, and is the result of 18 months of aging with a firm texture and deep rich flavors. The long aging and high quality milk result in patches of amino acid and protein crystal clusters that crunch in the mouth. To make the cheese capable of aging more than two years, the cheese makers must remove as much moisture as possible. They do this by cutting the curds very small; cooking them in a vat, then pressing them once they have been deposited in their molds. This process will enable the cheese wheels to last a long time as long as they are kept at the proper temperature and humidity and turned frequently.
Flavor:
The cheese is flaky with a creamy mouth-feel on the tongue and a clean refreshing taste with hints of toffee, butterscotch, whiskey and caramelized sugar. The fragrance from the cheese would leave you expecting sweetness, even though it contains no sugar. The flavors are concentrated, malty and mellow and almost fudge like.
Pairings:
This cheese is a good grating cheese but not on pasta. It is best grated on baked potatoes or a potato gratin. Serve it with your favorite fruits, good bread and a good wine. This Gouda, even though a bit sharp, goes well with fruity whites and light reds.
