Brillat-Savarin Affinée is a truly decadent triple crème cheese from Normandy, France. This is one of the richest cheeses you will ever try and should be shared with friends. The cheese was created in the 1930's by Henri Androuet to honor Jean Anthelme Brillat-Savarin (1755-1826) a French Lawyer, politician, epicure and gastronome. Brillat-Savarin became famous for his work, Physiologie du Gout (the physiology of taste) published in 1825. He is famous for saying "Tell me what you eat and I will tell you what you are". He also said “A day without cheese is like a beautiful woman with only one eye”. The average maturity time is about 3 weeks.
Texture:
Brillat-Savarin is made from pasteurized cow’s milk, enriched with cream. It is a soft-white cheese of round shape with a light, downy white rind and the cheese cuts like butter. Brillat-Savarin has a milky aroma with light lemon lactic tones.
Flavor:
Brillat-Savarin has intensely concentrated milky-creamy-buttery flavors. This triple crème will even pick up a bit of earthiness in the edible rind. The result will be velvety, silky, obscenely rich, and flavorful! When properly ripe this can be the most pleasurable of all triples with a decadent very creamy center that loads the palate with fresh cream flavors.
Pairings:
Great served with simple boiled meats or with a platter of apricots, berries, tropical fruit and Sparkling wines.
