Humboldt Fog is the signature offering of Cypress Grove Chèvre, located in Arcata, Humboldt County, California. Cypress Grove Chèvre was started by Mary Keehn in 1983 in McKinleyville, California. She then moved to Arcata, about 90 miles south of the Oregon border, in 2004. Mary started raising goats in the 1970s as a source of healthful milk for her children. When she developed her herd to a size that left her excess milk she turned to cheese making to keep them sustained. Today the dairy exceeds the amount of milk they need so Mary has turned to seven local dairies for milk. To maintain the quality of milk, every batch is tested and each dairy is paid depending upon milk quality. With a bonus system to encourage the finest quality, each farm benefits from its ability to meet or exceed Grade A standards. Humboldt Fog is an elegant, soft, surface ripened goat milk cheese that features a ribbon of edible vegetable ash along its center and a coating of ash under its exterior to give it a distinctive, cake-like appearance. Texture:
The texture is creamy and luscious with a subtle tangy flavor. A ribbon of vegetable ash through the center and a layer under the rind adds flavor and texture to the cheese. The rind is gray to bluish-gray and is covered with a uniform white mold. The appearance and texture of this white mold reminded the cheese maker of the Humboldt County morning fog, hence its name. The paste is chalky but moist and bone white, gradually ripening to a creamy smoothness from the outside in.
Flavor:
Humboldt Fog cheese reflects its terroir and has a soft mushroomy aroma with light creamy, yet earthy, gentle lemony flavors when young. With age, it turns stronger and develops more complexity with hints of allspice, licorice, cocoa and dried black pepper and a tangy finish. Its shelf life is generally 3 to 15 weeks but can be enjoyed at 6 months of age if properly cared for.
