Delice des Cremiers is a soft-ripened triple crème cow’s milk cheese from Burgundy, France. This cheese is made with pasteurized milk and ripened in caves. Delice is so sumptuous it delivers that wow factor when you taste it. Made with cream, double cream and crème fraiche it is essentially a Brillat-Savarin. Wikipedia describes it as “what Dairylea tastes like in heaven”. Delice is ripened for at least 3 weeks and then continues to ripen for two weeks more in the wooden boxes that it is traditionally shipped in. The fat content of Delice is about 60% or more and comes in a 7oz. round.
Texture:
Delice des Cremier is a soft ripened cheese with a bloomy rind. The color is a beautiful ivory with just a hint of gray in the rind. The texture is incredibly soft, rich, velvety, and creamy and everything a triple crème cheese should be. Delice is unquestionably stunning in early summer when the milk used to make it is at its best.
Flavor:
Delice is rich, buttery and soft with a little salty tang on the finish, a result of the bloomy rind. This cheese is so soft and velvety that it melts on your tongue and is just plain fantastic. Some people will detect a bit of sour edge but it is so balanced by the creamy sweetness you want to go back for more.
Pairings:
Delice des Cremiers makes one of the finest dessert cheeses I know. Serve with ripe berries, peaches, apples and grapes. Try mixing some Delice in your next berry smoothie, the texture and rich creamy smoothness will amaze you. This cheese does not match well with red wines because of the acids but if you do want a red wine, I would recommend a very light fruity red. The perfect wine match for Delice is Champagne or your favorite sparkling wine.
