Description:
Fromager Des Clarines, also known as La Clarines, is a soft cheese from the Franche-Comté region of eastern France, made by Jean Perrin. Jean Perrin makes the famous L'Edel de Cleron and Vacherin, a raw milk cheese. It is highly prized but not legally available in the US. Fromager Des Clarines is the second cousin of Vacherin, but slightly milder. The cheese comes in its own woodchip box. To serve, allow it to come to room temperature for at least 1 hour. Cut a hole in the top rind and remove. Scoop out the pudding soft interior with a spoon or provide bread sticks for dipping. Also great baked with white wine, fresh thyme and roasted garlic. Lay on a sheet of aluminum foil and fill the container with white wine and add the thyme and garlic. Wrap up the foil over the top and bake at 350 degrees F for 15 minutes.
Texture:
This cheese is best at room temperature when the texture is soft and gooey and could be easily spread on toast or crackers.
Flavor:
Very soft cow’s milk cheese with big, earthy, creamy, white truffle, buttery/nutty and tangy flavors. It must be served as close to room temperature as possible to release all of its unctuous flavors.
Pairings:
Serve with sweet fruits, air-dried ham like Prosciutto, toasted nuts or use as a dip for crudités or breadsticks.
