Description:
Northern Italy's classic blue from the Lombardy region dates back to ancient times, around the 12th century. This cheese was a member of the Stracchino family of cheeses and is one of the world's classic cheeses. Stracchino (root word Stracca) means “tired” or “soft”, comes from cows milked during their long journey to and from seasonal pastures. Gorgonzola comes in two varieties: Dolce (sweet) and Mountain or Naturale (sharp) Dolce, by nature of its shorter aging time, is wetter and more ivory colored than Gorgonzola Naturale, which is drier and whiter and tends to have bluer streaks. Dolce is produced from the curd of only one milking and made into various sized wheels that are ready for market at a very early age. This is unlike other varieties of Gorgonzola. The rind of this cheese has some streaks of blue mold but overall, there is very little evidence of the abundant blue and green mold common in many other aged blue cheeses.
Texture:
Dolce is wetter and more ivory colored than Gorgonzola Naturale. Its texture makes it perfect for spreading on bread and crackers. It is also excellent in risotto and polenta.
Flavor:
Gorgonzola Dolce is supple and luxurious with an unmistakable tangy creaminess. The early maturing of the dolce creates a milder and sweeter cheese than other blue cheeses.
Pairings:
Gorgonzola shines when paired with berries, pears, peaches, plums, walnuts and honey. It is also excellent in risotto and polenta, mixed into vinaigrette, melted on pizza or used in a dip. Try crumbling over a mixed green salad with walnuts, in soups, on baked potatoes or in a sauce for pasta made with sage and garlic, vegetable sauces and stuffings.
