Description:
A Vermont tradition since 1892, the factory was destroyed by fire in 1912, cheesemaking continued on a small scale until the 1960s. Dean Mathey, head of the bank of New York, created the Windham Foundation to preserve the historic village. The foundation purchased much of the village, including the Grafton Inn and the farm where the Cheddar cheese was still being made to preserve this time honored tradition. This extra aged cheddar is made with milk from selected herds of Vermont Jersey cows, chosen for their superb creaminess and high butterfat content. Farmers of these herds have signed affidavits that their animals will not be treated with synthetic bovine growth hormones and this cheddar is one hundred percent natural, free of any chemical preservatives or additives. The Classic Reserve Cheddar is aged for 24 months and is the signature product of the Grafton Village Cheese Company and has won over 13 cheese awards.
