Description:
Halloumi is a sheep’s milk cheese that has been a staple in the diet of the people of Cypress, Greece and Turkey for centuries as well as throughout the Arab world. The cheese is produced in block form and packed in small containers that are sealed with a small amount of whey brine to keep it fresh. The name Halloumi is one of the few words of the ancient Egyptian language that has survived; in Coptic, it was first written ialom, but the modern pronunciation is hâlûm. Halloumi is a very versatile cheese and can be grilled or cut-up in a salad. When heated the cheese thickens and is very good used in a sandwich.
Texture:
The cheese has no rind and has a springy, rather than crumbly texture that hardens as the cheese ages. It can best be described as having a texture somewhere between mozzarella and the briny moisture of feta cheese.
Flavor:
The flavor of Halloumi is milky and can sometimes taste like concentrated milk and is less salty than feta. The cheese is flavored with shreds of fresh mint and has a very pleasant after-taste.
Pairings:
Because it grills well, Halloumi can be grilled on skewers with pieces of vegetables. It is also served in pita bread with hot or sweet peppers, chili sauce and black or green olives. Halloumi becomes melty and delicious when sautéed in a little olive oil and seasoned with a squeeze of lemon and/or a bit of garlic.
