Description:
Le Chèvre Noir is a true maturing, firm ripened goat cheddar cheese aged over 12 months. It is made from milk obtained from July through December and supplied by a cooperative of about 20 producers in the center of Québec, Canada. The cheese is made in rectangular bricks, and then coated in two layers of black wax. There are two types of Chèvre Noir, pasteurized and unpasteurized. The pasteurized version is the one we will deal with. The pasteurized version is not really pasteurized but “thermalized” or heated to 145 degrees for 30 minutes. This cheese is aged 1 to 2 years and has won every major Canadian and American cheese-making award in its category.
Texture:
Le Chèvre Noir is bone-china white inside, with a hard, crumbly, smooth texture.
Flavor:
Le Chèvre Noir is a toothsome cheese that develops some minute, highly-flavored lactose nodules high in flavor. To make the cheese, the milk is warmed, a starter culture is added, then vegetarian rennet is added to curdle the milk. Next, calcium chloride is added to help give a firmer curd to work with and aids in developing that wonderful cheddar flavor.
Pairings:
Serve cool with fruits and nuts.
