Description:
The Cava Rosado, with its beautiful rose tint, suggests a fun and lively sparkling wine. Made from the indigenous Trepat grape and is one of the first 100% Trepat cavas made. Trepat is a black grape variety, used especially for rosé cava, from the Penedes and Tarragona regions of Spain.
Winery:
The Castell Roig Estate has been in the family of Marcell Sabate for many generations. The immaculate vineyards have been extensively studied and mapped in order to optimize the matching of varietals to climate and soils Unlike the majority of Cava producers, Castell Roig remains a small, family-owned estate that produces hand-crafted wines using only their own estate fruit.
Vinification:
The harvest is hand-picked at the vineyards of Terroja and Can Serra and transported to the cellar in boxes to avoid any bruising to the fruit. The grapes are cooled to maintain the natural aromas of the fruit and de-stemmed. After a light pressing, the flowery must undergoes a long slow fermentation in stainless steel tanks with no oak aging. In the cava house, the wines and cavas are aged in oak as well as bottle. The cavas are each made in the methode champenoise, the bottles are still riddled by hand in the cellars and the wine is aged for a minimum of 15 months in the bottle before being released to the market.
Bouquet or Aromas:
This cava is salmon pink in color with red berry, strawberry, anise and floral aromas. The aroma of wild strawberries is very pronounced in this wine and makes you think of all the scents of summer, picnics, and backyard parties.
Taste:
On the palate, the fresh fruit impression is reinforced with wild red berries, anise and lavender with an overall excellent balance and a crisp, dry finish. The mousse is quite small and active, enhanced with all those wild strawberry flavors you would expect. The color excites the senses and the flavors are delivered with every sip.
Pairings:
This Rosat Cava is remarkable in that it has the body to stand up to even the burliest of meals, yet it is balanced, elegant and refreshing. A great choice for a sparkling wine to serve with a variety of lighter and full-bodied dishes.
