Description:
A unique goat cheese from Sardinia and a rare find as there are few aged goat cheeses in Italy. The wheels of Pantaleo are made from pasteurized goat’s milk and made in six pound rounds. Pantaleo is made according to a recipe exactly like Fiore Sardo, except it’s made with goat’s milk, not sheep. The resulting cheese has a flavor that goes one step beyond.
Texture:
This is a hard cheese that is aged for at least a 100 days. The rind is thin with a pale gray finish. The internal paste is ivory to pale butter in color. The texture is smooth, compact, firm and somewhat dry, thanks to the long aging period.
Flavor:
On the tongue, the cheese conveys the perfect balance of salty and sweet. It tastes of hay, clover, white pepper, grass and herbs with a hint of a lemony finish. The cheese is full flavored with that perfect floral finish that keeps bringing you back for more.
Pairings:
This cheese is perfect as part of an antipasto with olives, marinated vegetables and salami. It’s at home on any cheese tray at the end of a meal or served with flavored honey, such as sage honey. Grate it on top of pasta dishes, salads and savory meat dishes such as braised lamb shanks for that perfect finish.
White wine: Vouvray, Fiano, Ansonica or Trebbiano
Red Wine: Barbera, Ruchè, Delcetto
