The Roth family began a successful cheesemaking business outside Zurich, Switzerland, in 1893. But, in 1991, three descendants of the family started a new cheese operation in Monroe, Wisconsin named the Roth Kase dairy. The Roth Kase dairy makes several cheeses, but Gruyère is its signature and the Surchoix Gruyère is the flagship. The cheese makers at Roth Kase follow the strict Swiss procedures for making cheese right down to the 15,000 pound copper vat used to cook the curds. They use pasteurized milk instead of unpasteurized milk. The young 16 to 18 pound wheels are rubbed frequently with yeast and brine and then selected bacteria is added to the wash. The bacteria is used to break down the surface proteins, establishing themselves on the rind and aiding in its development of the aromas and flavors until eventually it is washed with the brine only. The Cellar Master, after 9 months of aging, hand-selects the finest wheels of Gruyère for additional curing and to be made into Surchoix. Surchoix is from the French word meaning “top choice”
Texture:
Roth Kase Surchoix Gruyère cheese is a hard ivory-yellow cheese with a brownish thin rind. On the interior, you will find small eyes dotting the paste which has a dense, smooth, silky texture.
Flavor:
Surchoix Gruyère cheese is a full-flavored, robust cheese with complex flavors that are nutty, earthy, and fruity. The aromas remind some people of brown butter, caramel, toasted hazelnuts and Scotch whisky. The flavors can be nutty, sweet and concentrated and a great experience to just let it melt on you tongue.
Pairings:
Surchoix is great when paired with dried apricots, almonds, cashews, warm walnuts, melon, apples, and whole wheat bread.
